小拉合尔 – 迪拜’s new 宿醉后 早餐 joint.

上个星期’早午餐激起了我父亲的回忆’s old country house 和 all the traditional Pakistani 餐饮 I sometimes took 对于granted in my carefree years. One of the problems with having a vivid imagination is that you tend to dream a lot but it is even worse that you often end up remembering every 小 detail after waking up.

So I ended up turning to Zomato, my best online resource 对于information on 餐饮 和 饭店 in 迪拜 和 performed a search for ‘Halwa Puri’. One of the results that popped up was 对于‘Little Lahore’JLT的一家餐厅。

There were 2 早餐 combos on the menu. One consisted of halwa (semolina 和 但ter dessert), puri (deep fried bread), chana (chickpeas), aloo bhaji (stewed potato) 和lassi(酸奶奶昔)。另一个则带一个帕萨(炸面包),巴基斯坦煎蛋卷,布纳  keema (pan roasted mince 肉), achar (pickled baby mangoes) 和 拉西. We decided to go 对于one of each.

The 帕拉萨 (fried flatbread) had a crisp external layer which gave way to the soft bread inside. A Pakistani 煎蛋卷 usually has diced tomatoes 和 onions 和 some fresh coriander. Thanks to the light spices, I actually tasted the egg 和 every vegetable in every bite. The mince 香料又再少了一点,但我可以品尝一下用它烤过的姜。

酸奶奶昔(lassi)可以与 salt or sugar and we had one of each. Both variants were equally refreshing 和 were able to wash all the fried 餐饮 down effectively.

这不是我梦dream以求的一餐,当然也不是他们在我父亲那里享用的早餐’的老乡间别墅。我不确定纯粹主义者是否会喜欢这种halwa puri或bhuna keema。不过,奇怪的是,我们并不满意。我仍然渴望传统的香蒲酱,而我 可能必须飞往拉合尔才能实现  but if this is a modern take on the traditional Pakistani 早餐, so be it. If 小 Lahore wants to do 对于宿醉后 早餐s in 迪拜 what Zater o Zait did to post party 3 am hunger attacks, so be it.

Indian/Pakistani Cuisine has made its way into British lives like Donald Trump made his way into the White House. For years it wasn’t taken too seriously 和 now nobody seems 成为 able to get rid of it.

As much as I want to live on the edge 和 eat only at 饭店 that use ingredients like magic budwig, raw fish 蛋, a force fed goose’s fatty liver or any of the other wonderfully weird things that I can’t make head or tail out of, it is sadly not possible. I enjoy being adventurous once in a while 但 nothing matches the pleasure derived from sampling different renditions of a dish that you are familiar with.

For some, it may be an old fashioned 起司burger 和 对于some a bowl of ramen 但 对于me, it is a textured medley of rice, 肉 和 spices; also known as a biryani.

There are numerous different ways of cooking a dish 和 not all biryanis are created equal. Since I am a bit of an expert on the subject, I have taken it upon myself to list 11 of the most exquisite 布瑞雅尼s in 迪拜.

11) 古拉波 –迪拜Qusais大马士革街–香辣鸡肉Biryani– AED15.

这是一个古朴的小孔,夹在古怪的墙壁之间‘Billo Ice Cream’ 和 half a dozen hardware stores. What they lack in seating capacity (they actually have two chairs 和 a table) is made up with good, no nonsense 餐饮. Better known 对于their Karachi Bun Kebabs, I think their Spicy (yeah man!) Chicken 布瑞雅尼 is a force 成为 reckoned with. Couple that with an AED15 price tag 和 we have a definite winner.

10) 烤肉卷,Al Barsha(多个地点)– Meat 布瑞雅尼 – AED36

烤肉卷 started the whole BBQ roll trend in 迪拜 (hence the name). It is a lively joint in the streets of Barsha that is quiet popular 对于its cheap lunch buffet. While I enjoy an occasional Bihari Roll (must try ) from here, I tend to stay away from the buffet. What these guys do really well however, is the biryani.

Like India, Pakistan also has a multitude of subcultures 和 the local cuisine is influenced by lands as far off as the Persian 和 the Ottoman Empire. Each of the provinces has it’自己绘制的这道菜。

The standout winner here is the Meat 布瑞雅尼 which is made in the traditional Sindhi style of cooking. It is basically a 邓比里亚尼 with mild spices 和 saffron 但 the 肉 is slightly pre-cooked before being layered with rice (as opposed to the Hyderabadi style where the 肉 is mostly raw).

09) 凉亭 –商业湾海湾大道(多个地点)–Gosht Hyderabadi 布瑞雅尼– AED47.

If Billboard could have Elton John 和 Samantha Fox on the same top 10 chart, I can have a Fast Food type 布瑞雅尼 joint together on the same list as a Michelin Star chef as well. The type of biryani 和 the classification of the 餐厅 do not matter. What matters is the quality of the dish.

学生Biryani achieved a bit of a cult status in Karachi before they ventured out to 迪拜. Legend is that they used to sell biryani to college kids from a mobile 餐饮 cart. Word of this supposedly awesome 布瑞雅尼 spread far 和 wide 和 people used to come from all over to sample it. Fast forward to today 和 the company operates multiple 饭店 in Karachi, Sharjah, 迪拜 和 Toronto.

I love a good success story 和 their 布瑞雅尼 is pretty good too. I am a 小 unsure if it is good enough to spawn an international chain of 饭店. If you want to see the fast 餐饮 methodology at work in a biryani 餐厅, 学生Biryani is the place 成为. You get served within 10 minutes, the strength of the ‘masala’ (spices) can be controlled easily 和 they have more combos there than there are banks trying to sell you new credit cards in 迪拜.

07) 沙希·玛哈(Shahi Mahal),Al Faris购物中心,Al Quoz迪拜保龄球中心附近– Meat 布瑞雅尼 – AED16

‘Shahi Mahal’ translates to Royal Palace 和 对于a while, I felt I had teleported to Nawab Nizam ud Din’s court in Hyderabad. It was great while it lasted, 但 then I was asked to pay 16 dirhams 对于my meal. That didn’t feel regal at all 和 back I was in Al Quoz.

Yes, tucked away somewhere in the back alleys of Al Quoz is a place which serves authentic Dum 布瑞雅尼 对于AED 16 per serving. The aroma, the texture 和 the flavour of this 布瑞雅尼 are second to none. You can see tender 肉 sandwiched between layers of fragrant basmati rice as it gets to your table. You can tell that this 布瑞雅尼 was left to cook on low heat 对于a long time. What you can’t understand is how they manage 成为 profitable at this price point, especially when you see the quality of ingredients being used. I think I know now why the Mughals went bankrupt.

06) 英国人巴尔蒂,Al Barsha(多个地点)– Special 布瑞雅尼 (lamb chicken prawns 和 omelet) – AED56

The Koh-I-Noor wasn’t the only Indian thing taken back by the British to make their own. The Chicken Tikka Masala was probably invented in Southall 但 对于some it will always be an Indian dish.

It is loud, colorful 和 not everyone seems to agree with it 但 that doesn’t seem to bother it too much.

英国人巴尔蒂 is my favourite Desi-Brit 餐厅 in 迪拜 (Yes, there are several of those down here). It is appropriately peculiar, incredibly experimental 和 unapologetically British. The winner here is the Special 布瑞雅尼. It is not a Dum (layered 和 cooked on low heat in a sealed clay pot) 布瑞雅尼 但 a sort of a stir fry of rice, spices, lamb, chicken 和 prawns with an omelet added 对于good measure. Not at all how a purist would want a 布瑞雅尼 成为 但 good enough to make this one of the best 布瑞雅尼 joints in 迪拜.

05) 米拉斯·阿联酋。    迪拜购物中心Al Nasr村-香辣羊肉Biryani– .AED89

This was not the ‘Dum’ 布瑞雅尼 you get at Indian 和 Pakistani 饭店 or the Stir Fry type thing you get at Brit Asian 饭店. This was a creamy lamb gravy layered on top of aromatic rice. It was made of choice lamb 肉 that had been cooked to perfection in Arabic spices. Its tantalizing flavor had infused deep into the rice 和 it is the only Emirati 布瑞雅尼 on this list!

04) 杜姆·普克(Dum Pukht), JLT –羊肉Biryani – AED60

我可以想象一个‘迪拜最佳Biryani’竞争者,特别是如果您是一家小型餐厅, ’t seem to sort out its ventilation woes. Even more so if you are competing against Michelin Starred chefs, a 布瑞雅尼 behemoth with outlets as far off as Canada 和 a 餐厅 chain that employs more than a couple of hundred people in the UAE. From the looks of it though, Dum Pukht seems unfettered by the competition.

Not the kind of place you go to 对于an upscale fine dining experience 但 they have definitely cracked the biryani code. They use a metal handi (pot) instead of a clay vessel 但 the recipe seems 成为 the same as it was hundreds of years ago. The distinct scent of freshly ground spices enchants you as the subtle fragrance of basmati rice pulls you in. Sealing in the aroma is the secret to a good 布瑞雅尼 和 this 餐厅 has got that all figured out.

03) 朗玛哈尔 by Atul Kochhar,  JW Marriot Marquis –Hyderabadi Gosht ki(lamb)biryani– AED140.

It is about the value proposition 和 the presentation 但 most of all, it is about the experience 和 good 餐饮. The cost of eating a Hyderabadi lamb 布瑞雅尼 here is AED 140 (most expensive on this list) 但 the opportunity of sampling the wares of one of the world’最大的厨师是无价的。

Atul Kochar has 2 Michelin Stars 和 is one of the world’最有名的厨师,但您已经知道这一点。你不知道的是‘Rang Mahal’ is not the ‘举止就像您将要与米其林星级厨师共进晚餐,但别忘了呼吸’有点地方更像是‘哦,天哪!但是,当您在这里时,请找点乐子’ kind of place.

Ali, my friend from Hyderabad would have been proud to call this 布瑞雅尼 authentic. A bit of nostalgia kicked in as a familiar fragrance filled the air when it was being served. Saffron had infused every single grain of rice 和 the 肉 was ever so tender. The 马萨拉 (spices) were well balanced 和 they had made it extra hot on request. Just the way Ali’的妈妈在每个星期五都做到了。

02) 布扬,迪拜汽车城–汉迪的Hyderabadi Mutton 布瑞雅尼 – AED50

There may have been a tear in my eye while I carefully chewed on my first bite straight from the clay handi (pot). Tradition (and manners) dictate that I should have waited 对于it 成为 served on to my plate 但 a whiff of the aroma caught me off guard as soon as my server removed the seal.

It was the perfect Dum biryani 和 the presentation was second only to more expensive 饭店 on this list. Excellent value proposition with a generous amount of 肉 (just as the Nawab would have liked it), a side dish of ‘mirchi ka salan’ (green chilly curry) 3 chutneys 和 a raita (spiced yoghurt).

As I savored every bite, I realized that I may have finally come across the underdog that could unsettle the heavyweights. I couldn’t stop smiling because I had discovered the gem that would take on some of the biggest names in the culinary world, all from that 小 shop in 迪拜 Motor City.

01) Vineet Bhatia的Ashiana,迪拜河喜来登酒店–Dum 布瑞雅尼与日期–  AED108

我走过莫卧儿(Mughal)风格的Ashiana入口时,我笑了。这是一个明显植根于传统的男人的世界,因此我立即就Biryani的外观形成了看法。我的一部分感到有些失望。我曾去过迪拜的另一端,所以我可以将自己与Vineet Bhatia一样伟大。具有远见卓识的天才曾帮助改变了西方人对印度美食的认识,并因此成为当代印度美食的典范,但在这里,我走过莫卧儿人行道,欣赏着装饰在其墙壁上的莫卧儿艺术。

I could see that Bhatia had tried to stay closer to his Indian side, probably so because he thought that was what the customers wanted. He did add a twist to everything though; take 对于example the purple beetroot chutney that was served with poppadums while we waited 对于our 布瑞雅尼.
